It can be done a lot faster than we sail. Our first trip down the river we went from Toronto to Gaspe in 3 weeks then spent a few seasons sailing in that area. I think we were almost 3 weeks sailing from Gaspe to Halifax  too. We did not sail any overnights on these legs, all just day sails, 50-60+- miles etc. All summer sailing with mostly nice weather.
For an estimate you might say:
3 days Toronto to Montreal
2 days Montreal to Quebec City
7-10 days Quebec to Gaspe 
10-14 days Gaspe to Halifax
Cheryl's book has estimates too I think.
